The newest restaurant to arrive in Wichita is California Tortilla. They are a Maryland-based chain that will open their doors to the public later today. Located in the former Dickey’s Barbecue Pit space on north Greenwich Road, they are the latest fast-casual restaurant to feature a build-your-own style setup. This time it’s burritos. California Tortilla or “CalTort” for short has stated that freshness is the key differentiator between them and their competitors.

I was invited out to a soft opening the day before opening. Sometimes in those instances, the service is very personal, the food can be free, and/or perhaps corporate could be in town training to really skew the experience even more. So instead of giving a full-blown out review, I’ve decided to give you an idea of what to expect. Then once the newness has died down, I’ll go back in for a real review with some friends who’ve never been to get different perspectives.
The process is very simple, you can select a preset option from the menu where everything is decided for you or you can build your own. Whether it’s a burrito, burrito bowl, or a taco, everything is customizable to what you want? Sound familiar? It should be cause it’s a process you’ve probably been through a million times at various restaurants.

After you pay for your meals, next up is the drinks where there are Coke products along with a few lemonade and tea options.
Moving on past the drinks, you’ll find the ‘Wall of Flame’ where 75 different hot sauces await you. You’re welcome to try any of them. It should be an exciting moment for those who love condiments like myself.
