Derby is about to get a new yet familiar restaurant this weekend. Mexi-Kan Kitchen is opening Friday, May 1st at 1906 N Derby Road. If that name sounds familiar it’s because they originally operated a food truck in Derby as Manny’s Mexi-Kan Kitchen.
The new restaurant will be running under a soft opening and utilizing their drive-thru. They anticipate opening their doors to customers once it’s safe.
If you’ve never had Mexi-Kan Kitchen before, their popular staples include puffy tacos, street tacos, and Carne asada fries. Those will be available at the opening and then they will expand the menu over time. For now their hours will be 11am to 9pm drive-thru only.
