One of my favorite little Mexican food trucks can be found at the northeast corner of 31st and Meridian. Tacos El Sol does it all from amazing tacos, green chili burritos and even ceviche. It’s on our rotation of highly frequented trucks in Wichita.

Tacos El Sol, also known as El Sol de Michoacan Tacos Performance as listed on their Facebook page, sells tacos, tortas, burritos, ceviche, and tamales. The meats include asada, al pastor, carnitas, buche, pollo, barbacoa, cabeza, and lengua. They literally have a little bit of everything.
If you’re lucky and catch them on a time when ceviche is offered, I highly recommend it. It comes with tostadas and enough for multiple meals. I found myself just eating the ceviche out of the container with the spoon. I loved the acidic pop it gave my taste buds. Seriously, the stuff was to die for.
As for the tacos, they are your familiar street tacos I’ve come to grow and love over the years. For Megan, it’s her favorite taco in the city. Their al pastor/adobada is top-notch in her opinion. It’s the perfect blend of a sweet and savory meat. For me, I love their cabeza tacos along with their adobada.
And Tacos El Sol is home to my favorite green chili burrito in all of Wichita. It’s a big hefty burrito for $6 and has the most tender and delicious filling of ingredients. The green chili is spicy but in a mild way that doesn’t linger long in your mouth. It’s so good I could pour out the entire burrito’s interior into a cup and drink it.
The only issue I’ve seen some people have is their hours. The truck life can make it sporadic for them depending on the weather. For me, I always try to call ahead and place my order that way so it’s ready when I arrive. It just makes it easier and more convenient…. and assures me they are open.
Top 3 taco truck in all of Wichita in my opinion…. Tacos El Sol, give it a try.
