Saigon Bistro Revisited

They’ve been closed for nearly a year and after shutting down because of COVID, Saigon Bistro has finally reopened. The restaurant located at 3123 E Pawnee has been missed by so many people. It was one of the places near the top of my list to revisit and that time has finally come.

The menu is similar to some other Vietnamese restaurants around town. There’s a mix of pho, Banh mi sandwiches, rice dishes, bun, soup dishes and more.

On my latest visit, I ordered some bun with fried shrimp, grilled and roasted pork. It’s a meal that comes out  relatively quick at many places and Saigon Bistro was no exception.

There was a beautiful lively color to the dish when it arrived. Only three pieces of fried shrimp came with the dish. One thing I would have liked to see with the shrimp was for it to be diced up into many pieces so it could be mixed in with the pork, noodles and veggies. Part of the beauty of bun for me is getting a bit of everything in every bite.

Aside from that one minor detail, I was a big fan of the bowl. The pork was fantastic; the grilled pork was probably my favorite part of the dish. Bun is a pretty common dish that I find hard to mess up. It’s definitely a safe order if you’re pretty new to Vietnamese cuisine.

All in all, it was a good revisit to the reopened Saigon Bistro. I spoke with a couple of employees and they were very grateful and happy to be back.
