One of the few foods Wichita doesn’t really have is a true Chicago style pizza. But all that is about to change when the local food truck Big B’s Beef opens up their brick and mortar space in the coming months.
I was able to confirm the news with owners Brian and Liz Bathgate on Friday. Last month, they purchased the pizza oven that Doo-Dah Diner had originally used to make their take and bake pizzas. They’ve also come to an agreement to open at nights inside Fusion Restaurant at 1812 W. Douglas. Since Fusion is only open for breakfast and lunch, that leaves the evenings open which Big B’s Beef will use.
During that time, they will still have their food truck operating selling their Chicago-Style foods, such as Italian Beef Sandwiches, Combos, Italian Sausage, Chicago Dogs, Pizza Puffs, and more.
The big difference with their brick and mortar space will be pizzas. Once they open inside Fusion Restaurant, they will offer Chicago Style pizza, including deep dish and tavern style, along with pastas and salads.
It’s something Wichita has been clamoring for and it’s almost here.
No set time frame is set as they are still tweaking recipes, but rest assured, the staff at Wichita By E.B. will be staying on top of this and giving you all some sneak peeks at what to expect. Stay tuned!
