With the opening of The Truck Stop food truck park, the first truck I wanted to check out was the one who started it all, Willie’s Wings. They are a locally owned truck who specializes in (you guessed it) wings.

They have an array of unique and flavorful sauces and rubs to choose from. Every time I go, it’s like I’m in a relationship with my appetite and we fight and can’t decide over which sauces to get. Half the time, I just ask Willie for suggestions. This time he obliged and suggested the chili cheese along with the caliente dry rub, which he noted was the bestseller at the Truck Stop.
The last time, I visited Willie’s Wings when he was operating out of a storefront in north Wichita, he had some supply issues with the quality of his wings. This visit was a vast improvement from that. The wings were noticeably meatier and better. I particularly loved the caliente dry rub. Despite its name translating to hot/warm, the rub wasn’t spicy at all. It was more mild than anything, but still provided a vibrant, flavorful blast of yumminess in your mouth.
As far as wings go, they were great and Willie’s Wings makes for a great staple for the food truck park. With the number of sauces and rubs available, you’d be hard-pressed to find something you won’t like.
