A new restaurant recently opened in Derby called Las Vaquitas Mexican Food. It’s a family-owned establishment where family is truly the heart and soul of the business. The owners and their kids are the ones you’ll see cooking, serving, hosting, bussing throughout the day. I greatly enjoy these types of restaurants as the service is typically top-notch as it’s a full team effort with the same goal in mind.

My dinner at Las Vaquitas started with complimentary chips and salsa. The salsa was the runnier kind, which I still very much enjoyed; good balance and a small amount of heat. This was a good sign of things to come for my visit.
After perusing through the menu of enchiladas, tacos, fajitas, burgers, quesadillas, I landed on the burritos.
The burrito verde caught my eye and was a flour tortilla filled with diced pork, rice, and beans topped with chile verde sauce, shredded cheese, tomato, onion, guacamole and sour cream. This dish had it going on. Every single bite had so much flavor. The chile verde sauce was something I could have ordered as a drink instead of water. This wasn’t a bland, run-of-the-mill burrito you find at a Tex-Mex restaurant. I really enjoyed it and had no problem devouring it within minutes, as my daughter probably wondered if I was breathing.
Speaking of my daughter, she had chips and fries per her request. Dinner of champions…..
Our first visit to Las Vaquitas was fantastic. Everything from the service, food, and prices made for a wonderful time.
