Wichita By E.B. Dinner Series at FioRito Ristorante
Part two of the Wichita By E.B. Dinner Series is in the books. This one took place at FioRito Ristorante located at 3134 E. Douglas Ave.
The Dinner Series is an idea that’s been brewing for a long time. The goal of the series was to have an intimate dinner with fellow food lovers at a restaurant on a day they’re typically closed. So, the entire restaurant is just to ourselves and no food is ordered. That’s because the chefs get to decide what’s for dinner. We get no say in the meal, the chefs get to work their magic.
The owners of FioRito Ristorante, Jordan and Jason Rickard, were given an open slate to work with and they delivered.
Here’s a brief overview for those who missed out.
Wichita By E.B. Dinner Series at FioRito Ristorante
First off, local vodka owner Troy Brooks with Greatness Vodka was on hand as part of the event. Participants were able to get multiple tastings of both the regular vodka and the peach cherry. The latter of which I’m a huge fan of.
Big thanks to Troy for coming out. It was cool to incorporate some local flavors into the event in the form of locally owned liquors.
Here’s a look at what was served:
To start the meal, everybody was given tigelle with ramp agrodolce and house made lardo.
That was followed by roasted local cabbage, harissa, tahini, marcona almonds and bacon crumb.
The third course was spring pea risotto with sauteed morels, pea shoots, Parmesan reggiano and herb oil.
For course five, attendees were treated to braised brisket with beet and green garlic ricotta doppio raviolis, cottonwood cheddar fondue and gremolata.
To end the meal, diners were given FioRito’s take on a tumbleweed.
I was busy going from table to table, helping the staff, talking to attendees that I didn’t necessarily try everything, but I did get most of what was served.
After polling the crowd, they said the braised brisket with raviolis was the favorite, followed by the risotto with sauteed morels. I did try the morels and, my goodness, I could have had a full bowl of that stuff if I could have afforded it.
One of the things I noticed throughout the night was people pulling out their phone to Google some ingredients in each dish. Like me, it was their first time experiencing such things as lardo. That was one of the highlights for me because I love it when people are open to trying new things.
All in all, it was a great time meeting readers, chatting them up, hearing stories from both the owners of FioRito Ristorante and Greatness Vodka. I swear, the best times, are always shared over a meal and that’s exactly what the Wichita By E.B. Dinner Series is about.
