Crockpot Sundays: Hawaiian Meatballs

Hawaiian Meatballs
What the recipe should look like……..

With a golf tournament on Sunday followed by free food, I wanted to find something that would be minimal as I knew I wouldn’t be too hungry later that evening. Fortunately a random crockpot recipe appeared on my Facebook feed that looked simple enough for me to snack on later in the day. The recipe was called Hawaiian Meatballs. Just the perfect recipe to use on an NFL Sunday.

Here’s the actual recipe if you want a cleaner version of it.

Hawaiian Meatballs
Prep work

Ingredients
32 oz packaged of precooked, frozen meatballs (or turkey meatballs)
13.5 oz can of unsweetened pineapple chunks (put juice aside)
1 large green pepper, diced
1 cup of brown sugar
2 Tbl. cornstarch
2/3 cup of white vinegar
2 TBl. soy sauce

All you have to do is place the meatballs in the crockpot and place the diced green peppers and drained pineapple chunks over the top.

Then in a separate bowl mix the pineapple juice, brown sugar, cornstarch, white vinegar, and soy sauce and cook on low for 3-4 hours.

After mine were done, I noticed I should have mixed the meatballs around more. The pineapple juice mixed in with the soy sauce and vinegar was minimal so only the meatballs on the bottom tasted good. I also opted for turkey meatballs which was probably a bad idea. Of course my version came out nothing like the photo in the recipe but I’ve come to get used to that.

If I tried this again, I may opt to double the reserve juice.
