Big thanks to my friend and one of my wedding clients, Megan for sending me this Sunday’s recipe called Mississippi Pot Roast. I guess this is a very popular crockpot recipe that many other friends of mine have used before. I felt the pressure so decided to give this one a go.
Here’s the actual recipe if you want a cleaner version of it.
3 lb of chuck roast
2 tbsp of olive oil
1 packet of Au Jus mix
8 pepperonichini peppers
1 packet of Ranch dressing mix
1 salt & pepper
1 stick of salted butter
Over high heat sear the chuck roast with the olive oil for a couple minutes on both sides. Season it with salt and pepper. Once that is done, place the chuck roast in the crockpot.
Place the Ranch dressing and Au Jus mix over it. Then place the pepperonchini peppers and butter on top. Set the crockpot to low for 8 hours.
Boom. It’s done.
This one was excellent. Once it was finished, I grabbed a couple forks and pulled it apart and placed it over a bed of rice. You can taste a small hint of the ranch and Au Jus mix but it’s not so much to overpower it. Definitely another fine recipe to add to my crockpot Sundays collection.
Super easy to do and I just let it cook overnight. I was able to wake up to a delicious smelling kitchen. Thanks again to Megan for the recipe. I’m five weeks in and looking forward to what next week brings.
