Delicious Recipes: Bell Pepper Meatloaf

Meatloaf is one of my favorite dishes ever.

While googling “easy healthy dishes”, I came across a recipe for Bell Pepper Meatloaf. It looked amazing. I immediately saved it, sent it around and employed the help of a friend to help make this dish. Because knowing my culinary skills, I would not be able to make it look close to what the recipe called for.

The actual recipe calls for ground beef, but we substituted that with turkey. You can find the actual recipe here but we’ll post it on this blog as well.

Everything is really simple:

  • bell peppers
  • 1 lb. ground turkey
  • 1/4 c. bread crumbs
  • Egg, lightly beaten
  • 1 tsp. Worcestershire sauce
  • 1/2 Onion, finely chopped
  • 1/2 tsp. fresh thyme leaves, chopped
  • clove garlic, minced
  • 1 tbsp. tomato paste
  • kosher salt
  • Freshly ground black pepper
  • 1/4 c. ketchup
  • 1 tbsp. brown sugar
  • 2 c. Shredded Monterey Jack
  • 1 tbsp. Fresh parsley, for garnish
  1. Preheat oven to 350° and line a medium baking sheet with parchment paper. Cut ends off peppers and set aside. Remove seeds and slice peppers into 2” thick rings. Place on prepared baking sheet.
  2. In a large bowl, combine beef with bread crumbs, egg, Worcestershire sauce, onion, thyme, garlic and tomato paste. Season with salt and pepper and stir until combined. Fill each pepper with meatloaf mixture.
  3. In a small bowl, whisk together ketchup and brown sugar and brush on tops of meatloaf. Bake for 35 minutes, then top with cheese, and bake 5 to 10 minutes more, or until cheese is melted. Garnish with parsley and serve.

Prep Time: 15 min.

Total Time: 1 hour

This might be one of my favorite recipes to make at home now. And honestly, I can’t taken any of the credit because I am not sure I did a single thing to help make this dish besides stand and continually ask, “What can I do to help?”. Apparently standing there and not making any mistakes counts for helping. My friend isn’t the biggest fan of meatloaf but even after trying it, she loved it.
