While dropping by Salina, KS for the Hairball concert which I’d highly recommend to all, we were looking for a quick dinner spot. Many of the other recommended restaurants like Martinelli’s and Blue Skye Brewery were too busy so we ended up selecting Coop’s Pizzeria.

There were all sorts of different pizzas to choose from but we opted for their artisan thin flatbread pizza with pepperoni, beef and mixed peppers along with a house salad.
The salad came with their house balsamic vinaigrette that was excellent. Our server told us their dressing is very popular with customers and we could see why.
As for the flatbread pizza, we both thoroughly enjoyed it. It had a nice coating of marinara that was delicious. It was light and exactly what we needed before a concert. The thin crust had a nice crisp to it; just a very flavorful pizza. The only minor setback was the lack of toppings in the middle of the pizza. Otherwise, it was a great and a place we would recommend to anyone traveling through Salina.
The pizza didn’t take long to come out either. We were a little concerned we would be in a rush but everything came out quick which was impressive considering there were only two employees servicing the entire place.
On their website, they advertise themselves as “The Best Pizza in Salina You Will Ever Eat!”. That could very well be the case there.
