Must Try Menu Item: Smoked Prime Rib at Bite Me BBQ

It’s time to make another suggestion on a menu item in Wichita. The latest stop took me to Bite Me BBQ. There’s been a dish there that I’ve been wanting to try for the longest time. It’s only available on Friday and Saturday. It’s the Smoked Prime Rib which is the topic for the latest installment in the “Must Try Menu Item” feature.

I love prime rib and don’t eat it too often for some reason. When asking for prime rib in Wichita, Bite Me BBQ was a highly recommended place to satisfy my craving. Upon arriving, their chalkboards already had it advertised as the weekend special. They had three sizes to choose from, 12oz, 16oz and 24oz. I went with the 16oz rare with pasta salad and carrots as my sides.

What came out was a dish I believe weighed more than my own daughter. The thick cut of prime rib had very little fat on it and a light amount of bark around the edge.

I started with my sides which were great but I finished them as fast as I could so I could focus my time on the smoked prime rib.

I could describe my experience with one word. Wow.

Each bite had such an incredible flavorful smoky profile that stuck out. There were times I didn’t even bother with the Au Jus or horseradish. It was good by itself; tender, juicy, and nearly melt in your mouth. The only thing I would have possibly liked was for it to be even more rare but how it came out was still wonderful. Sitting here typing the blog, I can still taste the smokiness. God, it was so good.

I do have to talk about their Au Jus sauce. It wasn’t extremely runny; there was a thick denseness to it that made for an excellent compliment to the prime rib.

The word perfect is not something I toss around the blog often. Hell, I can’t even remember the last time I used it to describe something. So, dare I say this was the perfect prime rib?

I’ve had some other prime ribs recommended to me which I’ll have to try, but for now, Bite Me BBQ is the gold standard I will go by moving forward.
