
One of my favorite little Mexican restaurants for the longest time has been a place called Birrieria Raymundo over at 124 E 21st St. They serve goat birria which is a highly underrated dish in Wichita that is phenomenal. The owners of Birrieria Raymundo just opened a new restaurant in southwest Wichita called Chuyitos Birrieria Mexican Grill. There was a soft opening this week with the grand opening set to take place Saturday. I stopped by to check out the new space and of course get myself some birria.

Upon arriving, we were given complimentary bean dip, consomé and chips. I loved the consomé. It was a bit spicier than I remember but went down so smoothly.
When I finished the small cup of it, they even brought me a second bowl. It’s so good and a great starter/palate cleanser for any meal.
For our entrées, we ordered the platillo de birria, birria enchiladas and chicken nuggets for the little one. I have never ordered chicken nuggets at a Mexican restaurant before so I feel I have finally made it as a parent.
This may sound silly but the nuggets were actually top-notch. They had a nice crispy shell with thick piece of chicken underneath. The nuggets reminded me of one of my favorites in town at West Street Burgers. Six nuggets, fries, beans and rice at $5 was a steal of a deal for a kid’s meal.
Next up were the birria enchiladas. While I had a relatively awesome time at Chuyitos, the enchiladas were a bit of a disappointment. The birria was a little dried out being cooked in the enchilada. This was feedback we would later provide to the restaurant.
I’m no food expert but I feel this is the best way to have birria.
If you need a reminder on what birria is, it is a Mexican dish from the state of Jalisco. The dish is a spicy stew, traditionally made from goat meat or mutton, but occasionally from beef or chicken. It’s also a popular soup that’s great for hangovers.
The platillo de birria is probably a top twenty dish in Wichita for me. For those unfamiliar with birria, it’s so unique than to any other soup you can find in town. There were chunks of goat swimming in the salsa; all meat and no bones. The meat was very lean and tender with the salsa adding a spicy, rich flavor that I think anybody would love. Tortillas and all the fixings were supplied which I used to make tacos.
Overall the dish did not disappoint at all. They nailed the experience of Birrieria Raymundo at this new location and offered an incredible bowl of birria that’s likely my favorite in town.
While I was sitting there, I saw servers walking around wearing Chuyitos Birrieria trucker-style hats. I asked if I could buy one because I love those hats and wear them often. When I asked how much it would cost for me to buy one, a child brought one to me and said it was on the house.
Now I can proudly support the restaurant not just through this blog but while out and about.
