First Look at Primos Mexican Food Truck

There’s a new food truck that opened in Wichita called Primos Mexican Food Truck. It might look familiar to some as the owners purchased the truck from La Costena who closed last year. Thanks to reader, Ryan Muzzy, for giving me the heads up on this truck. I don’t think I would have ever come across it originally. Primos Mexican Food Truck parks out in front of Lowes on north Maize Road. It’s very rare for a food truck to be parked out in northwest Wichita. I had to give it a try the moment I heard they would be open.

Primos offers a simple menu of tacos, tortas, tostadas, burritos, quesadillas and hamburguesas. I’m sure many people may be rolling their eyes at another Mexican food truck. But if you live in Northwest Wichita, food trucks are rarer than people who don’t complain about driving to East Wichita.

I kept my order simple for the first visit. I went with a ceviche tostada, shrimp taco, an al pastor taco, and tripa taco.

Starting off with what I loved most, the shrimp taco was outstanding. The mayo-style sauce they had was very flavorful but that best part for me was how they chopped up the shrimp into tinier pieces. Often times, shrimp tacos have big pieces of shrimp which all come out in one bite. The diced up shrimp ensured even amounts of shrimp in every bite. It’s the little things in life that matter sometime.

The al pastor and tripa tacos were also nice. The al pastor was well-seasoned; not too sweet or salty and the tripas tacos had a slight grilled texture to give them some crunch.

My only point of discontent was the tostada. The amount of fish was disproportionate to the tomatoes, onions, and cucumbers. There wasn’t enough fish in it, all I could taste were onions and cucumbers.

The tacos were fantastic though and would warrant another visit when I’m in the area shopping on the weekends. It’s definitely worth a try especially if you live in Northwest Wichita and love yourself some taco truck food.
