His family member owns El Azteca Mexican Restaurant and he has been managing La Hacienda, now Chris Martinez has branched out to open his own restaurant, Los Cabos Cantina & Grill in the former Los Compadres space in west Wichita. We stopped by to check it out and get an idea of what you can expect.

Once we were all seated, everyone was handed their own complimentary salsa with chips. One of my friends went with their queso which she loved.
Instead of queso, I opted to go for one of their cucumber margaritas. If you love cucumbers, you’ll love this drink. It had a refreshing blast of cucumber in each gulp.
I had the Pina fajita which included steak, chicken, and shrimp cooked with pineapple, bell peppers, onions, and topped with cheese sauce. Everything was stuffed inside a pineapple and came with tortillas. The aroma was incredible, but the taste was even better. It was very savory, but the pineapple gave each bite a sweet acidic pop to compliment all the meat and seafood stuffed inside. Seriously, this was an incredible dish that was filling and worthy of being shared with others.
The three of us also shared some quesabirria. It was the first time two of my friends had birria and they were both very impressed. Of course, anything birria is only made better by the consome.

We all had a great time on our first visit to Los Cabos Cantina & Grill. I’m sure many people will be excited to finally have a new Mexican restaurant taking over the space that was left vacant by Los Compadres for so long.
