It’s time to revisit one of my favorite spots in town, Bill’s Charcoal Grill. The restaurant has sat at the corner of 29th and Arkansas for decades and is one of the few restaurants in town to get a flavorful char-grilled burgers. Let’s give them their due.

While I’ll always be in support of their CharBurgers, one item I’ve never tried is their pasta. What some people don’t know is there’s a dinner menu with pasta dishes, ribeyes, steaks, wings and more. I’ve heard good things about their dinner, so I had to swing by to check it out.
I went with the chicken pasta carbonara which came with penne pasta. The picture doesn’t do it justice, but the meal was big enough for at least two people. The carbonara sauce had a creamy, silky texture. While I’ve found carbonara sauces to typically be rich, I found Bill’s Charcoal Grill to be a little on the lighter side, which was fine by me to contrast the heaviness of the pasta. Overall, it was an excellent rendition and one that I had to eat over two meals. No complaints here.
Of course, any visit to Bill’s required a burger order, and we had a cheeseburger with chili. The chili was a bit spicy, yet delicious. It paired perfectly with the burger. Their toasted bun is done just to the point where it doesn’t fall apart from being too toasted and soft enough to squeeze and still do its job of holding the burger together. There was a nice char flavor and the patty was well-seasoned. The thing about Bill’s Charcoal Grill is their burgers, for the most part, are basic, but executed well.
All burger lovers should give Bill’s at least one shot to see how it stacks up on their personal list of the best burgers in town.
