It’s a truly sad way to end the year when your favorite Vietnamese restaurant is closing for good. Thao’s Bistro will only be open for a few more weeks. I wanted to swing by, pay my respects, get my fill of delicious food and experience Thao’s at least one more time. Who knows, I may go again in the coming weeks.
For now, they will be open the weekend of December 17, tentatively opening for the entire weekend of Christmas and open the weekend of December 31.

I stopped by and started my meal with their pork and shrimp spring rolls and a hot tea. It’s one of my favorites in town; just plump, delicious spring rolls dipped in a peanut sauce. Life doesn’t get any better…..
….Or does it? For my main entree, I had their bò kho which is a Vietnamese beef stew with french bread. It was just the Vietnamese comfort dish I needed on the cold winter day. It’s rich, heavy and packed with some intense flavors. There were plenty of tender beef cuts inside to fill me up. If that doesn’t do it, then dipping the bread into the broth will surely leave you not wanting to eat for days.
I sat down, took a picture and just lamented for a moment about how big a loss this was going to be for the local restaurant scene. Thao’s Bistro has long been a family favorite; their menu has been filled with dishes we grew up on.
They will be missed. Please give them their due and stop by before they close.
