Bennigan’s appears to be making a return to Wichita

It’s been years since Wichita last had a Bennigan’s. The last location was at 111 S. Rock Road, which is now B.D.’s Mongolian Grill.

According to the company’s website, Bennigan’s will be making a return to Wichita but not how you traditionally remember them as.

Earlier this year, Green Mill Restaurant & Bar closed in the Holiday Inn at 549 S. Rock Road which is the southwest corner of Rock and Kellogg. Green Mill is now 54 Craft (same ownership, different name), but it appears that Bennigan’s potentially joining in the fray with a new concept.

Bennigan’s On The Fly is a polished fast-casual brand for non-traditional venues that have less square footage than a traditional full-service Bennigan’s. Basically, most locations are delivery-only models in the form of a ghost kitchen.

Ghost kitchens are commercial kitchens optimized for third-party food delivery service. The kitchens themselves don’t have a storefront and the staff prepares dishes off of their menus that are only available for delivery. Think of it as a virtual restaurant operating as a digital storefront, with a few back-of-house staff members working on fulfilling online orders. For example, MrBeast is a popular ghost kitchen concept available in Wichita.

What’s not known is whether Bennigan’s On The Fly will strictly be a ghost kitchen or have a storefront and take over the 54 Craft/Green Mill space. But it’s very possible both could co-exist.

Most Bennigan’s On The Fly menus around the country feature simple appetizers, soups, salads, and sandwiches that could be prepared in the same kitchen as any other ghost kitchen.

This could open the door for more ghost kitchen restaurants out of the former Green Mill kitchen, such as another MrBeast Burger or even a new one like Mo’s A-Maize-N Fried Rice. The options are endless when it comes to the ghost kitchen offerings.
