First look at Iron Jacket BBQ; a once a week popup in Mulvane, KS

There’s a new barbecue option open in Mulvane, with a catch. It’s only open on Sundays. Iron Jacket BBQ is a barbecue pop-up of sorts.

The bbq is sold and available out of The Grill’s restaurant space at 222 N. Avenue. Everything starts at 11 a.m. and closes once they sell out. And according to their socials, the sell outs happen a lot.

I made the 30-minute drive to check out Iron Jacket BBQ and arrived right when they opened. There were probably a dozen or so customers already at 11 a.m.

The menu featured brisked, pulled pork, sandwiches featuring either of the two meats, and two sides to choose from: potato salad and baked beans. I ordered a 1/4 lb of each meat and both sides.

There were also two sauce options, an espresso and a Texas-style, along with bread and pickles.

Here was my order. The Iron Jacket BBQ owner tossed in a couple of burnt ends; something he also gave to others who were waiting in line.

Starting off with the sides, the beans were best described as a bean salad. I’m going to be honest, I’m not a huge fan of beans in the first place. So, this already wasn’t something I’d typically order. I bought them only because I wanted to order a bit of everything off the menu. The potato salad was also a pretty simple take; nothing over the top here.

The focus was really on the pulled pork and brisket at Iron Jacket BBQ.

Between the two meats, I was a big fan of the brisket. The bark was easily my favorite part of the brisket. While we did get some fairly fatty pieces, I loved the flavor and probably would have been best served just ordering a full pound of it. It was very tender and a million times better than anything I could do at home.

I enjoyed the pulled pork, but the brisket really overshadowed everything and was the star of the show at Iron Jacket BBQ.

The whole time sitting there eating, I was observing the owner and he was definitely a people person. He was greeting everyone who came in, offering little samples as he was cutting the meat, thanking customers for coming in, many who already appeared to be regulars.

Overall, Iron Jacket BBQ is a cool addition for Mulvane, KS. It’ll be interesting to see if they eventually outgrow The Grill’s space they are using on Sundays and open their own brick & mortar space down the road.
