
It’s been almost 9 months since Red Bird was announced. The sandwich shop coming to Normandie Center at Central and Woodlawn broke ground, and people have been curious about the status of what could be one of Wichita’s most anticipated restaurant openings.
Many people may know Sebastian Gordon, who was a minority partner and manager of Dempsey’s Burger Pub, along with the now closed Dempsey’s Biscuit Co.. He and his wife, Ashley, are opening Red Bird, which will be located next door to Yokohama Ramen Izakaya at 6440 E. Central.
Red Bird will feature sandwiches including what could very well be the best Cuban in town, but that’s for the Wichita diners to decide. They’ll also have craft beers, cocktails, and wines on hand.
Now the big question, when will they open?
The original plan was for this summer, but after issues with construction, the timetable is in limbo. It’s not an uncommon issue in opening a restaurant, so while summer is a possibility, don’t be surprised if it gets pushed out.
