I was recently blown away by a meal I had from a food truck called PaPa C’s Backyard BBQ. A while back I had their BBQ when they were doing popup dinners. Since then, a food truck was acquired, and I saw it parked outside of Central Standard Brewing one evening.

The menu consisted of sandwiches, burgers, and meat by the pound.
I wasn’t feeling a sandwich and just wanted straight up BBQ with a side. So, I went with a half pound of brisket and a side of greens.
The first time I had PaPa’s C’s brisket, I remember really enjoying it. But I believe they have upped their game since the last time. It was some of the most tender brisket I’ve had in recent memory. I took this home with me to eat, and the smell alone was killing me. It was so good, I almost pulled over in the Kellogg construction lanes to eat.
It didn’t end there.
The pickles were delicious and spicy, and the greens were arguably the best part of my meal. And I say that with no disrespect to the brisket because that was heavenly, but the greens were just as good. I would honestly order that as a meal next time….. with a side of brisket, of course.
PaPa C’s gave me three different homemade BBQ sauces to try, but I ended up not even using them because everything was so great by itself.
