Up next for Crockpot Sundays is a recipe I received from one of our readers, Stephanie. Thanks for this super quick easy one because I have to admit, I almost didn’t even get to Crockpot Sundays this past weekend. Like last weekend, this recipe required three ingredients which is right up my alley.
Here’s the actual recipe if you want a cleaner version of it.
Ingredients
2 pounds of boneless chicken breast
1 (16oz) jar of chunky salsa
1/2 cup of balsamic vinegar
Add chicken breasts to the slow cooker, pour salsa and balsamic on top. Cover and cook on low 6 hours or high 4 hours. Shred chicken with a fork and mix with the salsa mixture.
From the author of the recipe:: This recipe makes delicious tacos or burritos. If desired, add additional garnishes, i.e. lettuce and cheese. Also, makes great sandwiches when served on buns.
Since I was in a rush, I was able to start this off on high and have it ready to go for dinner once I was done playing basketball.
Once it was ready, I pulled it apart very easily and placed them in tortillas. The balsamic vinegar mixed in with the chunky salsa was much better than I thought it’d be. If you want something spicier, go with a hot or medium salsa.
Just like last week, this was extremely easy and quick to do.
