A Cambodian restaurant with Asian and Cajun fusion inspired dishes headed to West Wichita

A new restaurant focused on Cambodian dishes with Asian, Cajun and even American fusion is headed to West Wichita. Happy Eggroll which started out as a home-based business has been looking to open a restaurant. But with COVID-19, those plans were stalled. Now they have a lease signed and ready to get going on their building.

I don’t want to ruin the surprise on where exactly the restaurant will be. I’ll let them announce that when they are ready to which will likely be on their Facebook page.

Since the start of the year, Happy Eggroll has selling crawfish, fried rice, egg rolls, crab rangoon. They will continue to do so from their Facebook page while their brick and mortar location is being finished. I spoke to the owner, and she’s excited to expose Wichita diners to many of the dishes she loves.

At the moment, they are aiming for an end of year or early 2021 opening. But don’t let that stop you from ordering their food now to get a sneak peek of what’s to come.

Until then, here’s a look at some of the dishes I’ve had from Happy Eggroll in the past. I’ll keep you up to date when I hear of an opening date. Be sure to also follow them on Facebook.
