If you pass by the Waterfront often, you’ll see construction taking place at 1441 N. Webb Road in the former Zoe’s Kitchen building. If you haven’t heard, Grimaldi’s Pizzeria is on the way to take over the space.
Grimaldi’s Pizzeria, founded in Brooklyn, NY, serves traditional coal-fired brick oven pizza. They plan on bringing to Wichita their New York-style pizza, which can be hard to find in town currently.
It’ll be a big addition to the Waterfront area that has long been waiting for a restaurant to take over since Zoe’s closed.
Currently, the closest location can be found in Overland Park.
When are they opening?
A rep at Grimaldi’s Pizzeria told me, they are slated to open in late April. When I get a definitive date, I’ll be sure to pass that on. Until then, I’m quite excited about this one and will definitely have a first look ready to go when they open. Stay tuned for more!
