They are awaiting final inspections but once that’s approved, Wichita’s newest food truck called Brazita Bites will be hitting the streets hard. The name of the food truck was inspired and a combination of the two places owner, Rodrigo Ciriaco, calls home, Brazil and Wichita.
Their specialty will be coxinha which is a fried dough ball stuffed with different fillings like meats and cheeses. It’s a popular handheld snack in Brazil and will soon make its way to Wichita.
I recently got a sneak peek at coxinha and am really excited at what’s to come. The ones I tried were stuffed with cheese; it was like a cheese ball on steroids. I could only imagine how much better they would be with chicken or pork inside. The coxinha themselves were large, probably twice the size of a regular cheese ball you’d find at restaurants and bars.
The easy to consume treats should make for a great food truck rally dish with kids and adults.
There are plans for not just savory coxinha but sweet ones as well. It’ll be like a main dish AND dessert at one food truck!
