ABOUT THE OWNERS
Seong was born and raised in South Korea, after he graduated college in Hotel management major he travelled to Japan and fell in love with the food and culture there. Shortly he moved to USA followed his sister in Los Angeles and started his career as a sushi chef. After years of hard working with his passion in Japanese cuisine, he became a well known sushi chef in the industry. He got a job offer in Kansas and moved here where he met his wife Ada who moved here from China to attend graduate school at Wichita State. They started their family and business at the same time. And now they have 3 successful restaurants and 2 beautiful children.
ABOUT THE BUSINESS
All their restaurants offer both authentic and fusion style sushi, have full service bar with a few non-sushi options such as bento box, hibachi and noodle dishes. All their sauces and dressings are house made and entire menu items are MSG free. The owner has his own secret recipe for his sauces and is the only one who makes all the sauces. That’s also the key for them to keep their food taste consistent. Seong was the only chef worked 7 days a week the first few years while Ada was serving and managing the restaurant until their first Ninza Sushi Bar burnt down in 2017. The fire pushed them to take over Blue Fin Sake Bar to ensure their employees were able to keep their job and keep themselves going. Later 2018 they were able to reopen their first Ninza Sushi Bar. They took their time to build up their customer base over 2 years and decided to open their third restaurant Ninza Sushi East. All of these small steps show that everything happens for a reason.
