One of the best dishes in all of Wichita: The birria ramen at Chuyitos Birreria

It was time to revisit one of my favorite new restaurants from 2020. Chuyitos Birreria is located at 1415 W. Pawnee St. They have a dish that was added to their menu in 2021 that combined two of my loves: birria and ramen. I’m all about fusion dishes, so I had to check it out.

I knew I was going to order the new dish, but when I arrived. But before that, I was given complimentary bean dip, consomé and chips to start. I loved the consomé. It was a bit spicier than others around town and incredibly delicious. If I had to rank it, Chuyitos Birreria has the best in town.

I’ve had the goat birria from Chuyitos before, so I knew I would enjoy this version of the dish that had ramen noodles added to their broth.

Tortillas and all the fixings were supplied, which could be used to make tacos if you wish.

The ramen came in a similar dish called platillo de birria. There were chunks of goat swimming in a type of salsa; all meat and no bones. Then ramen noodles hid underneath, but came up for air thanks to my trusty utensils.

The meat was very lean and tender, with the salsa adding a spicy, rich flavor. Once combined with the noodles, it turned an A+ meal to an A+++ meal. Ramen noodles and birria made complete sense, once fused in a dish. It came off well and tasted great.

I think some people started to get burnt out on all the birria around town, but Chuyitos Birreria was one of the original places to do it in town with their sister restaurant, Birreria Raymundo. The combination of birria and ramen was a no-brainer of a dish and complimented each other so well. This dish was under $10 which was a great deal, especially considering the complimentary starters. I left completely satisfied and happy.

Since then, I’ve had the dish multiple times, and it’s quickly become one of my favorite meals in all of Wichita.
