There’s a little food truck at the northeast corner of 31st and Meridian that has caught my eye for some time. They are sitting right out in front of Davis Liquor and only open on Thursday, Friday, and Saturday. My friend and I were finally able to make it out over the weekend to try this little Mexican food truck.

Tacos El Sol, also known as El Sol de Michoacan Tacos Performance as listed on their Facebook page, sells tacos, tortas, burritos, ceviche, and tamales. The meats include asada, al pastor, carnitas, buche, pollo, barbacoa, cabesa, and lengua. We ordered nearly one of every single protein except for pollo. I tried to order one of the ceviche tostadas but they were out it that evening.
The tacos are you familiar smaller sized street tacos. It took roughly five minutes from the point of order to pickup. Once we arrived home and opened the containers, the wonderful aroma of authentic Mexican food filled the air.
These tacos really surprised us. I haven’t had good cabesa tacos (aka cow head) at many places around town. Tacos El Sol just may have been the best ones. We both loved their al pastor tacos which provided some great flavor. None of the tacos were all that fatty which I usually find is the case with some lengua. The double shelled tacos did a phenomenal job of holding the meat in tact. Even after a long drive home, they were not soggy at all.
All that time waiting to get out to Tacos El Sol was worth the wait. For how few days they operate and the lack of customers we saw over our visit, we were certainly surprised. My friend and I were highly impressed with their tacos and will certainly be going back for more.
Just a heads up, their sign on the menu mentions they close at 8 but we were told 8:30 when we asked. I have noticed though they sometimes close earlier than advertised so just something to be aware of.
