Revisiting SmokeHouse ICT at The Truck Stop

While I have absolutely zero ties to The Truck Stop,  I’ve been making multiple stops to the food truck park because ultimately, I want to see it succeed, which could potentially lead to one in other areas of town. On my most recent visit there, I came across SmokeHouse ICT. It’s a mobile trailer that’s been around for a couple of years, and one I first visited last year.

SmokeHouse ICT offers traditional Central Texas style BBQ meats accompanied by sides made from scratch.

I had their “three ball” which was a 3-meat platter of pulled pork, brisket and smoked sausage links. My side was a homemade baked mac and cheese. I’ve had it before, and the baked mac is one of my favorite sides from any truck. It had a strong smoked flavor followed by tons of cheesiness.

Of all the meats, my favorite that day was the smoked sausage link, which had a bigger kick of heat to it than I remember. I didn’t even bother with the accompanying BBQ, since it was good by itself. The same went for both the pulled pork and brisket; this was simply delicious, tender BBQ that was great on the go.

I remember finding them at some business office, so it was cool to see them at a food truck park for a bigger audience to check out what they had to offer. The guys working the truck at very cool and just great additions to our food truck scene.
