What to expect at Grimaldi’s Pizzeria

Thursday is opening day for the much anticipated Grimaldi’s Pizzeria, who is taking over the former Zoe’s Kitchen space at 1441 N. Webb Road in Waterfront Plaza. The pizza chain that started in Brooklyn specializes in New York-style pizza.

Until this week, the closest location was in Overland Park. And for those who live in West Wichita, they may still think Overland Park is closer than driving to the east side.

For complete transparency, the night we stopped by was a private VIP soft opening frequented by a plethora of local food bloggers, vloggers and other diners. All guests were treated to a free appetizer, main entree and dessert. And because of the free meals, I’m leaving opinions regarding the food out of this, as to avoid bias (sub-conscious or not) of any sort.

Instead, here’s an idea of what to expect.

Grimaldi’s make their pizza in a coal-fired brick oven using a special coal called anthracite that I was told burns cleaner and more eco-friendly than gas or wood.

Inside the restaurant’s main dining area can seat close to 70 people, on top of the covered patio that can be used year round and seats 50.

Pizza from Grimaldi’s can be ordered in 12, 16 and 18-inch options, giving individuals, couples, small parties and large groups different sizes to choose from. There are Chef’s Selections like margherita, prosciutto arugula, the Don (which is loaded with various meats), along with a build your own option.  There are nearly 30 different toppings to select from. If you want something different, they have calzones, salads, and appetizers on the menu.

Pictured below are the family size bowls of the Mediterranean and Caesar salad.

Those with dietary restrictions will be happy to know they offer a gluten-friendly crust along with a cauliflower crust.

We had the margherita, The Don, a cheese pizza and a slice of the quattro formaggi.

There’s also a full bar inside.

Lastly, you can’t forget about dessert, there’s a menu of seasonal cheesecakes, cannolis, and tiramisu.

If you really can’t to check out Grimaldi’s Pizzeria sooner than later, the grand opening date is Thursday, April 27. They’ll be open every day from 11 a.m. to 9 p.m. during the weekdays, and open until 10 p.m. on Friday and Saturday.

As a fan of New York-style pizza, I can assure you we will be returning soon on our own dime and time to get a real review to share with you all.
