Thai Riffic Food Truck Revisited

The weather was nice over the weekend so I wanted to do some food trucking. Thai Riffic Food Truck was a truck that closed down last year but decided to reopen after missing out on cooking for their fans. Since they were parked out at Lowes in Derby, Thai food sounded perfect for lunch.

As the name implies, Thai Riffic Food Truck specializes in Thai dishes.

On my latest visit, I went with their Pad Meeh which was pan-fried rice noodles with egg, chicken cooked in a sweet black soy sauce, carrots, cabbage, broccoli, green onions and topped with bean sprouts and green onions. I also went with their Thai Basil which is one of my favorite dishes from them.

Everything was fantastic. The Thai Basil was delicious and served with a side of rice that I just mixed in with the dish. It had a good bit of heat to it, nice chunks of chicken and a variety of different vegetables. The sauce wasn’t too salty or heavy on the meal; every bite had a really light flavorful aftertaste that kept you coming back for more.

The Pad Meeh was an extremely filling delicious that felt like it was never going to end. There was a mountain of noodles to be had. There was a sweetness to the dish that wasn’t overly sweet. This would be a great starter dish for anybody new to Thai food.

All the food at Thai Riffic is made to order so it’s always fresh. I’ve always been a big fan of the food truck and am glad to see they are back. Thai Riffic can be found most of the time in Derby, KS. They have my seal of approval.
